Eleni is one of the founding organizers of Triangle Meatless Monday. She also co-organized the Bull City Vegan Challenge. In her spare time, she drums for Beloved Binge, screens her documentary Seeing Through the Fence, volunteers in her Cleveland Holloway neighborhood, and leaflets as a part of the Adopt a College program.
Leeanne, an active volunteer for Triangle Meatless Monday, helps out by keeping track of our database of pledges and sends out periodic emails to them. In addition, she helped spearhead the proclamation issued by Durham County in support of meatless mondays. She has also been known to hand out delicious samples of vegan food at various local events. When she's not working, Leeanne spends her time hiking with her adopted terrier-mix.
Amanda is one of the volunteers for Triangle Meatless Monday working on restaurant participation and outreach events. She also volunteers for a local animal rescue group. In her spare time, she is on the leadership team for EtsyVeg. Amanda is proud to be gluten free and vegan and is part of a related blogging community. When not working, she likes to spend time with friends, family, her husband, Ollie (dog), and posting on her blog. She also enjoys laughter, hiking, reading, sewing, drawing, and creating.
Where does that clean, sterile-packaged meat in the grocery store come from? Why do I eat meat? What do I do if I choose not to eat meat? Lena asked herself these questions 7 years ago and the answers led to her choosing a vegan(ish) lifestyle. As a nurse practitioner, she also understands the health benefits of a whole foods plant-based diet. Lena has enjoyed volunteering for Triangle Meatless Mondays by recruiting participating restaurants.
Julie recently joined the TMM group after moving to the Triangle area in 2011. She is currently working on restaurant participation and outreach events. Before moving, she volunteered with animal rescue groups - including fostering and transporting! In her spare time, she enjoys spending time with her husband and 4 dogs.
Tobin Freid is the Sustainability Manager for the City and County of Durham. She first brought the idea of launching Triangle Meatless Mondays to Eleni and Shirle after seeing the success of the Bull City Vegan Challenge. A vegetarian since 1989, Tobin recognizes the positive impact on the environment that a plant-based diet can have.
